This recipe was not planned it was more of something I came up with while I was cooking. Literally, just started throwing things in the skillet and this is what I came up with…..
As the title says, this is chicken with mushroom and peas. I started off by heating the following in my skillet:
- 2 tbsp of olive oil
- 2 tbsp butter (plus a few tablespoons more)
I warmed the butter and olive oil in the skillet then added the chicken breasts. While those were cooking I sliced the mushrooms. i used a few different kinds. Whatever I had in the refrigerator that night.
- 4 chicken breasts
- white wine (or whatever you have on hand)
- 1-2 cups frozen peas
Once the chicken was cooked I removed them and cooked the mushrooms. I added a bit more butter and cooked the sliced mushrooms. I also had a little bit of white wine sitting in the fridge, so I decided to pour that into the mushrooms! I let all that condense and cook then added my chicken back in and let all the flavors come together. Then I opened the freezer, thinking that my dish looked a little boring, so I added peas.
I let the peas simmer and cook through a bit and Viola! Dinner was ready.
Simple enough!
