Our house had been hit by the cold! Faith has been coughing for over a week now and can’t seem to get rid of the stuffy nose, basically she’s miserable. So I have been fixing some of her favorites lately, just to get her to eat. Waffles are one of her favorite things to have. She loves to eat them for breakfast, but also just as a quick little snack. It’s a comfort food for her.

I have said before that I love Namaste Foods products. Their waffle and pancake mix is fabulous. I use to make my own better for pancakes, but really I can’t beat this one. The flavor is good and they are so quick and easy. I had these waffles done in about 30 minutes.

One of our favorite add-ins for waffles are chocolate chips. These waffles literally taste like a chocolate chip cookies with little semi-sweet morsels added in! We also add in blueberries, raspberries, and sometimes just a touch of cinnamon and sugar! This time I just did chocolate chips and mixed berries. Faith loved mixed berries (raspberries, blueberries, and strawberries)

All I have to do is add the waffle mix to milk, eggs, and vegetable oil – mix and pour! The waffle iron lets me know when it is ready to go and also lets me know when the waffles are finished cooking. Let me tell you these waffle are huge!! Let me say, one waffle is enough for me!

So have waffles tonight for dinner or for breakfast tomorrow! They are so worth it and really, they are not time-consuming at all! Next time I may have to do these for dinner with fried chicken. I have heard it’s really good, chicken and waffles, honestly, I have never tried it. Hmmm….guess I’ll have to do it and let you all know how it works out!
