Up and Moving

So the last week has been full of ups and downs in our house. The dreaded flu hit a little over a week ago and it seems to linger just enough to keep me from fully getting back on my feet. I must say, my energy this week is much better than last, at least I am out of bed and moving around. This flu bug is nothing to mess around with. I tried! The first two days I told myself that if I just kept going than I would be fine. By the end of the second day, I was exhausted and feeling horrible. Body aches, headaches, earache, sore throat, scratchy throat, and a brain fog that is still following me around. Well, maybe I always have a bit of brain fog (ha,ha). By the third day I was sleeping as much as possible and not leaving my bed unless I absolutely had to. It wasn’t until day six or seven that I actually left my bed and began venturing out among the living again. We have totally lived off of Freschetta Gluten Free Frozen pizza over the last week, or my kids favorite gluten-free chicken nuggets that they can easily throw in the oven and fix them selves!

I am beginning to get back into the kitchen, slowly. At first, my kids have not wanted to eat anything I fix, afraid they may get sick with this darn flu bug. Luckily, so far they have not shown any signs. I am sure at this point that if they do come down with this they will not have gotten it from me. Reports from news have said that this year is one of the worst flu bug’s we’ve seen in a while. I think I can attest to that. I usually don’t get the  flu and I never get a flu shot! No one in my family gets the flu shot. Hmmmm….not sure if I will re-think that for next year or not, cross that bridge when I get there I guess.

Anyway, I am up and moving and will start working again this week. I have experimented with a mug cake the other day for my youngest. It was gluten-free and semi-low carb. It was good, but not quite good enough! Have to play with the ingredients a bit on that one.
