So I had indicated a few weeks ago that I had been experimenting with mug cakes. Well I didn’t invent this one….but it is so delicious and easy that I had to share it. This comes from a low carb/low sugar website that I love to check out, All Day I Dream About Food. I really love to check her out several times a day. This may be the first recipe of hers though that I have made. I promise it is so easy and yummy, you may make it every day for awhile. This took me about 5 minutes to whip up! From start to finish!!!
I will admit that I made it a bit differently than she did on her website, but it still worked out perfectly. I took everything and mixed it all up in one bowl. I decided if I was going to make this it was going to be a one mixing bowl kind of thing. I wasn’t going to dirty up two separate bowls just to make mug cakes.
This recipe made 6 mug cakes and we only have 2 left as of now. Not sure if they will last through the evening hours!
- 1/3 cup peanut butter
- 1/4 cup butter
- 1 cup almond flour
- 1/3 cup sweetener (I used Monk Fruit Sweetener, you could use whatever you have)
- 2 tsp baking powder
- 2 large eggs
- 1/2 tsp vanilla extract
- 1/4 cup water
- 1/4 cup chocolate chips (sugar free, you could use milk chocolate if you want or sugar free, or even dark chocolate ones).
In a microwave safe bowl melt the peanut butter and butter together, about 1 minute, and then in 15 second intervals if necessary, stirring in between. Melt until they are smooth. Stir well to combine. Mix in the almond flour and stir until combined with the peanut butter and butter. Next, add in your sweetener, stir to combine well. Then add in your baking powder and vanilla, mix until well combined. Finally stir in the eggs one at a time, making sure to mix well after each addition. Add your 1/4 cup water at the end and stir well again. I did a lot of stirring and mixing.
Divide the batter into 6 mugs or ramekins. I used ramekins. Microwave each one separately for 1 minute. Be careful when you take out of the microwave, they will be hot. Let sit for a few minutes to cool!
